Description: Head Chef / Kitchen Manager £40 -£45k p/a

The role

This is a high-profile role for a Head Chef / Kitchen Manager with the ability to run a kitchen operation serving up to 400 covers per service in a beautiful seafront location on the South Coast. The site will have significant year-round trading with the main peak during the summer months. The site will serve a quality but affordable food offering with the aim to gain a market share of the out of season period to the local population. This site requires and Head Chef / Kitchen manager you can take all-round operational control to maintain and improve, where required, all aspects of the kitchen including: deliveries; ordering; rotas; team training; cleanliness & hygiene; financial documentation and stock taking, legal compliance, service standards, and brand integrity. My client is looking for someone who can work with the current menus which have been developed, and subsequently evolve them seasonally using creativity and financial awareness on their own or in collaboration with a development chef. This is the first of a possible handful of sites in coastal towns & cities backed by a successful local entrepreneur.

A little more about the concept

The new development will comprise of six beach-hut style "shacks" with at least one celebrating the NHS, providing all-day dining alongside wellness and fitness facilities. Each shack will offer locally sourced food and drink, including coffee from West-Sussex roasters Craft House Coffee and Bespoke Lager, brewed in collaboration with Shepherd Neame. The sixth, the Fish Shack, will focus on fresh seafood sourced by a local fish monger. As well as offering all-day dining, the venue will also include a lower area accommodating fitness facilities, in collaboration with Underground Gym and Uber Mummies, that will offer classes and training both indoor and on the seafront.
