Description: This2AA Boutique Restaurant and Bar located within Suffolk is looking for an experienced and competent Chef de Partie to join their kitchen team.
The menus are created, crafted and prepared with culinary passion by our talented team of chefs using fresh seasonal ingredients sourced nationally and locally from Suffolk, Norfolk and surrounding areas making thisboutique restaurant some of the most interestingly different and enjoyable food in East Anglia.
As Chef de Partie you will beresponsible for all culinary dishes that are prepared inyour section. You must be very knowledgeable about the specialities, as well as culinary functions in general.
This role is managed by your Line Manager and is a non-managerial role.
Main Job Tasks and Responsibilities of this Chef de Partie Role are:
To oversee the preparation, cooking and presentation of meals, including:
Ensure that dishes are prepared and cooked according to the specific restaurant standards
Maintain a detailed knowledge of the full menu and be able to explain dish descriptions
Correctly follow all recipes supplied
Ensure knowledge of the product is maintained and communicated to all relevant personnel
Ensure that all stocks are kept under optimum conditions
Keep working section clean and tidy at all times
Ensure the cleaning schedule is adhered to and that cleaning tasks are delegated as appropriate
Monitor stock movement and be responsible for ordering on your section
Check deliveries are correctly listed and cross-checked against invoices
Ensure that stock is rotated and controlled
Keep kitchen wastage to a minimum and identify ways to improve profitability
Keep on track of any shortages and communicate to your Line Manager
Learn and record skills and recipes from other members of the kitchen
Ensure compliance with legal requirements under Safer Food Better Business
Comply with all policies, procedures, standards and guidelines ensuring they are carefully adhered to
Report any maintenance issues to your Line Manager immediately
Liase with the Head Chef/Sous Chef and implement new menu/dishes/systems where applicable
Knowledge and Experienceof this Chef de Partie role:
Be able to work independently and as part of a team
Have previous experience working in a similar role
Excellent use of various cooking methods, ingredients, equipment and processes
Familiar with industry's best practices
Ability to multi-task and work effectively under pressure
Work quickly without compromising quality
Be uncompromising in achieving company standards
Build effective and constructive relationships
Continually strive to achieve personal goals and objectives
As Chef de Partie you must also be:
Organised and methodical
Clean and tidy
