SOUS CHEF - SHEFFIELD - 24K

Description: The opportunity has arisen for an experiencedSous Chef tojoin the team in an exciting venture in Sheffield.

Main Duties/Responsibilities:
Assist the Head Chef in defining standard production specifications for all dishes, fully costed and regularly updated
Assist in designing menu cycles and product offers that are appropriate for the consumer base whilst remaining competitive with local competition
Maintain a detailed knowledge of the whole menu and be able to explain dish descriptions
Oversee the planning, preparation, cooking and presentation of your section and in the absence of the Head Chef the whole kitchen
Manage and cost waste to agreed percentages
Manage portion control and coach/brief front of house staff to serve portions accordingly
Accountability for all orders, delievry, storage and allocation of ingredients and products
Essential/Must Haves:
Have previous experience as an experience Sous Chef, or Chef de Partie with an emphasis on banqueting and formall dining.
Experienced and understanding in current food trends and delivering unusual and innovative foods
Will have a natural love for cooking with quality, local and seasonal produce
Possess a can do approach and a positive attitude
Will ead by example and take responsibility for your actions
Standards andguest focused, and confident in dealing with a wide variety of clientele and situations
Communicate clearly, professionally and concisely
Able todeal with multiple tasks and prioritise accordingly
Work on own initiative in a fast moving restaurant and event environment with limited supervision
Work collaboratively with others in pursuit of team goals
Computer literacy in Microsoft Word, Excel and Email
Desirable attributes:
Hold a current intermediate Food Hygiene Qualification
Kinetix bookings system experience
Experience in assessing and implementing staff training and development progress
Experience in devising staff rotas
Experience in managing food costs nd labour costs
