The Company has an amazing opportunity for a Full Time Head Chef to join their family owned country house hotel. Set in a beautiful location close to local attractions and events on the South Coast in Hampshire, with a 42 room Hotel and kitchen for guests and private functions. This is a permanent position.
The hotel has long had an enviable reputation for high quality personal service and has been Highly Commended in national tourism awards.
Easily accessible from public transport links and situated close to local attractions and events, which are held in the village centre, giving the hotel a relaxed surrounding and the chance to sample local atmosphere and fascinating historic buildings.
The hotel is in an amazing location between two main South Coast Cities. In a location famed for its natural beauty, which makes it an ideal base from which to explore the area, with energetic walks along the waterside and sea shores from the hotel.

Key Features of the Role:
The right candidate will have a Head Chef background, in a hotel and restaurant environment ideally. As you will need to understand the benefits and challenges of both revenue streams to the business.
The hotel wants you to have the ability to build a new team around you. Utilising existing members of staff and accessing their skill level and ability. As well as being able to identify where there is a skill shortage and recruit effectively and correctly.
Being a professional and high quality hotel you will also be required to display excellent written and spoken communication skills. You must have experience of dealing with all levels of Kitchen Management. Interacting with staff and making them feel engaged through respectful communication and be setting an example.
Another key feature of the role is a professional yet team orientated friendly manner. Being professional at all times with language, tone and portraying a positive and robust attitude, patience and tactful. Someone who wants to go that extra mile and expects high standards.
Finally, the hotel requires you to be hands, on with the ability to stay calm under pressure. Having experienced looking after several things at once, while displaying a smart, calm and professional appearance at all times. Working the hours necessary to get the job done.
Knowledge and Skills:
You will ideally be an accomplished Head Chef with a similar Hotel and Restaurant background. With your practical experience supported by some form of catering qualification.
You will possess a good level of computer skills and knowledge, to be able to compile orders, vendor delivery requests, staff rota’s, margin reports, working hours report for payroll, stock rotation, menu creation etc.
You should have experience of working in a busy kitchen environment, having to manage your team, kitchen, time and food orders, with a passion for producing the perfect dish every time, whilst under pressure.
The Company is looking for a talented Chef who possesses ambition to continually develop themselves and others and who wants to make a name for themselves. As well as someone who can lead a team through respectful communication and as an involved team player.
You will be someone who is tactful, patient, clear and has concise communication skills. You must also be able to handle management responsibilities such as disciplinary action, dismissal, motivation, correct identification of kitchen assets and how best to use them.
You will need to have a good knowledge of hygiene and health and safety.

A basic salary up to £30,000 depending on experience + bonus based on kitchen margin targets being achieved.

Creative licence within the hotel within certain parameters to come up with menu choices and themes that inspire your team to be creative and for guests to enjoy.
The Hotel kitchen runs 7 days a week from 6:30 to 23:00, working 30-50 hours per week potentially across 7 days.
Managing a team of 5 Chefs, 1 Porter, 1 Breakfast cook.
